“The sap from our maple trees is still happily running even though the weather is warmer than usual and not at the suggested temperature.” says Shirley Fulton-Deugo, proprietor of Fulton’s Pancake House & Sugar Bush. “The ideal temperature for the sap to run is suppose to be 5 degrees C below at night and 5 degrees C above during the day.”
