DSCN0045Summer Baird is owner of The Hintonburg Public House, 10 Wellington St., Ottawa. Summer is looking forward to being part of the Wine and Food Festival. Summer was chef at the Urban Pear for four years and aims to serve local ingredients when possible and enjoys the partnership she has with Muskoka Brewery. Kris Kshonze is the head chef of the restaurant and gained much experience as chef at Mariposa Farm.

The Hintonburg Public House’s braised bacon balls with spicy mayo.

Makes approximately 25 balls
 

  • 2 lbs (1 kg) slab of double smoked bacon 
  • 1 onion, quartered
  • 2 tbsp (25 ml) cider vinegar
  • 2 cups (500 ml) bread crumbs
  • 3 eggs beaten
