Gay Cook’s Minted Fresh Lemonade

Homemade lemonade is easy to make and doesn’t require making a syrup.

For more intense favour, add the squeezed lemon rinds to the lemonade

1 cup  (250 mL)juice from 3 or 4 lemons reserved

1/2 cup (125 mL) granulated sugar, or to taste

4 cups  (1L) water

2-3 fresh mint sprigs optional

6 lemon slices and 6 fresh mint leaves, for garnish

In a glass or china pitcher, combine the lemon juice, squeezed lemons, sugar, water and mint. Allow the sugar to dissolve, stirring often, for 20 minutes.

To serve, remove the mint springs and lemon shells. Fill glasses with ice cubes, stir the mixture and pour into the glasses. To make the garnish, remove the pits from the lemon slices. Cut a slit in each slice from the edge to the center.  Slide each slice onto the edge of a glass and add a mint leaf.
