Another gorgeous vegetarian cookbook by London England’s famed restaurateur, chef and cookbook author Yotam Ottolenghi. Although not a vegetarian himself, he ventured into this world when he was asked to write a column about vegetarian cooking in the Guardian newspaper. This resulted in his first vegetarian cookbook Plenty, a beautiful ode to the variety of vegetables, fruits and ways of preparing them. Plenty More is a continuation of his first, but with a good deal of experimentation from his kitchens. He divides the chapters into vegetables and fruits that are tossed, steamed blanched, simmered, braised, grilled, roasted, fried, mashed, cracked, baked and sweetened and he comes up with such innovative dishes as tomato and pomegranate salad, derived from a visit to Istanbul, globe artichoke and mozzarella with candied lemon, Brussels sprouts risotto and grilled lettuce with farro and lemon. Just to read the book and look at the lush images is to spend an evening in bliss.
The recipes are a combination of riffs on dishes gathered from around the globe and innovative new combinations. They feature some traditional ingredients and dishes dressed up with an unusual flourish and new recipes emanating form his kitchen experiments.
If you are an adventurous cook, t his book will be a joy to try, often using novel ingredients or combinations of ingredients. If you are just a cook book reader, as a surprising number of us are, you can enjoy imagining the combinations and looking at the stunning photos. Either way, this book is a winner.
